Ingredients:
- 4 tomatoes, diced*
- 1/2 large onion, diced
- 2 cloves garlic, minced
- 1-2 Tbsp extra virgin olive oil
Directions:
- Place all ingredients into a sauce pan and simmer over low heat for at least 25 minutes or up to 1 hour, until the sauce cooks down and thickens.
- Use this sauce to dress vegetables, pasta, rice, and other dishes.
*A 28-ounce can of diced tomatoes may be used, which will reduce the necessary cooking time.

Use this recipe as your “base” to which you can add celery, bell peppers, hot peppers, and your favorite herbs and spices to taste. Serve over chicken, fish, tofu, vegetables, or atop an omelet. Add to soups, stews, rice, and beans.
